This process demands a lot from the team, and it works like this:
Fishermen catch the king crabs.
The caught crabs are then stored in the live fish hold on the ship. As the name suggests, the purpose of the live fish hold is to keep the crabs alive during transport to shore.
At the processing plant, the legs are separated from the body and clustered together. All parts are thoroughly cleaned and then placed in mesh containers.
During cooking, the crabs are immersed in boiling brine, giving the shells their famous reddish-orange color.
After cooking, the crabs are rinsed with cold water to prevent overcooking.
Then they are immersed in a brine glaze to prevent freezing.
To maintain their natural flavor and texture, the king crabs are flash-frozen at extremely low temperatures.
